What is Stollen?
Stollen is a traditional German Christmas pastry. It is said to have originated in the state of Saxony, Dresden, Germany. The dough is kneaded with brandy-soaked dried fruits and generously coated with powdered sugar on the surface.In Germany, there is a custom of slicing Stollen thinly and enjoying it gradually during the period of Advent (the four weeks leading up to Christmas Eve) as a way to eagerly anticipate Christmas. This gradual consumption allows for the appreciation of the flavor changes as it matures. A Stollen weighing about 750g can last for approximately six months at room temperature. The ample powdered sugar coating helps in preserving it for an extended period, making it suitable to be enjoyed in Japan until the Christmas season.
History of Stollen
The history of the Dresden Christstollen dates back to the 15th century. The term "Christstollen" was first documented in the year 1474. At that time, the stollen was a simple baked good, also known as "Striezel" or "Strutzel," and was only allowed during the pre-Christmas period as a fasting dish. It was only in the last century that this simple baked good evolved into the delicacy we know today. Because up until the 15th century, the religious doctrines of the Roman Church hardly permitted more than water, yeast, and flour for the Striezel recipe. Thus, the Christstollen may not have been particularly flavorful, lacking butter, milk, raisins, candied citrus peel, or almonds. To put an end to this dilemma, Elector Ernst of Saxony and his brother Albrecht appealed to Pope Nicholas V, requesting the lifting of the butter ban.Emperor Ernst of Saxony and his brother Albrecht sought to change this restriction and petitioned Pope Nicholas V to lift the butter ban. In 1491, the "Butter Allowance Certificate" was sent to their principality, permitting the use of high-quality golden butter, which improved the taste and texture of Stollen.

Emil Reimann GmbH is one of the biggest companies famous for producing stollen with its registered office in Dresden, which is the capital of the German state of Saxoniy considered as the place where stollen is originated and the first genuine Christmasmarket took place.
